Comments:
- QUATS sanitizer at 200ppm and cloths changed frequently (every 30 minutes)
- High temperature dishwasher temperature was 74.4C at plate level on final rinse cycle.
- Cooler temperatures in compliance, reading 4C or less
- Foods kept frozen in freezers but temperature above -18C. Employee actively using them at time of inspection. Ensure that freezers kept at -18C or below.
- Handsinks equipped with hot and cold running water, soap and paper towel.
- No expired food products and first in first out (FIFO) principle in use
* Sanitation of premises very good. Be aware that under shelving units in storage room there are some coffee beans and other debris. Frequency of cleaning + sanitation should be increased in this area.
