Staff on duty unable to describe reheating and hot holding procedures
Correction: Product discarded.

To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.

Product is to be reheated to 74 C prior to hot holding.
Comments

Hot dog cooking / hot holding process discussed with asst. manager. Grill is set to hot hold product and a cooking step had been previously conducted. Internal temperature of weiner 80 C.

Premise cleaning conducted, premise sanitation restored.

Storage room has been re-organized and de-cluttered, moving all inventory off the floor onto shelving to allow for ease of cleaning.

Ensure cleaning is conducted daily to maintain sanitation in a consistent manner.

Asst. manager on duty has Foodsafe training.
