Observation (CORRECTED DURING INSPECTION): - Observed house made chilli oil sauce in a big container measured around 40C. Staff stated they were prepared 2 hrs ago

Corrective Action(s): Ensure to follow correct cooling procedure. Cooked food should reach 60 deg C - 20 deg C within 2 hours and 20 deg C to 4 deg C or below within 4 hrs. Use smaller /more shallow containers and/or use ice wands to actively cool food items.

Observation: - Live mouse observed in a tipcat trap inside kitchen (dishwashing area)


Corrective Action(s): discard themouse/install new glue board inside the trap. Premise is currently under monthly contract with Orkin. Increase the monitoring frequency to biweekly.

* Equip liquid soap & single use paper towels by the two compartment sinks of the drink station
- Bleach sanitizer in spray bottles measured at 100 ppm chlorine
* Equip at least 1 sanitizer bottle in the kitchen.
- High temperature dishwasher reach 71C at plate level during final rinse
- ventilation hood panels in sanitary condition
- All coolers at 4 C or below
- All freezers at -18C or below
- No hot holding observed at the time of inspection
- Temperature log maintained

* Install more ceiling lights inside the kitchen
* Permit fee of $150 can be collected during follow up inspection
