Observation: Dishwasher final disinfecting rinse at an excessive temperature of 82 Celsius.
Correction: Hot water supply at 67 Celsius. Hot water tank temperature will to be decreased to address the dishwasher excessive final rinse temperature
Comments

Dishwasher final disinfecting rinse at 79 Celsius. Manufacture specifications are final rinse as per gauge to be in the range of 180 - 195 F. Final rinse on temperature gauge is 210 F
Sanitizer concentration to be tested at least weekly to ensure the concentration is at 200 ppm Quats. If the solution concentration is significantly greater the sanitizer dispenser requires servicing.
