Observation (CORRECTED DURING INSPECTION): Dough machine was observed to have food debris accumulation. Operator stated it had not been cleaned since last night.
Corrective Action(s): Clean and sanitize dough machine. All equipment must be cleaned and sanitized every 4 hours at a minimum, and should not be left dirty overnight.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Front hand washing station was missing paper towels, and back hand sink had no hot water available.
Corrective Action(s): Operator supplied front hand sink with paper towels at time of inspection. Back hand sink is to be repaired (see violation code 308).

Observation (CORRECTED DURING INSPECTION): Non-food grade materials were being used to cover pizza dough.
Corrective Action(s): Only use food-grade materials for covering food (ie, saran wrap).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Hot water faucet of hand sink at back of kitchen was not working again.
Corrective Action(s): Call a plumber and repair faucet. Hot and cold running water must be available at all sinks.
*Note: an additional handwashing station was available at the front of the kitchen.

- Pizza hot holding unit was above 60C at time of inspection. *Note: if pizza is held at below 60C, it must be discarded every two hours and a time-keeping log must be in use and available for review on-site.
