High temperature dishwasher has been serviced. Service company connected chlorine sanitizer to the dishwasher unit.
Detected 100ppm chlorine at plate level.
Chlorine test strips provided.
Cleaning of the flooring area under espresso machine was not properly cleaned; directed operator to clean floor to the wall.
Completed at end of inspection.
Bleach sanitizer is available in labelled buckets, measured at 100ppm.
Quats sanitizer in spray bottle in use. Optimal level is 200-400ppm, test paper also available.

***Observed reusable cups/mugs being used. This is in contrary to the condition required on the Correction Order.
A violation ticket to non-compliance of Correction Order shall be issued. Please run all dishware and utensils through dishwasher.
