Observation (CORRECTED DURING INSPECTION): Discussed dishwashing methods with operator using existing 2 compartment sink. Sanitizing step inadequate. large sink washing, sprayer for rinsing with possible quats spray bottle sanitizing.
Corrective Action(s): Make sure staff follow Cobs sanitation plan for manual dishwashing. Ensure one of the sinks is filled with sanitizer (quats at 200 ppm) and dishes are submerged in solution for minimum 45 seconds as described in dishwashing sign located at sinks.

Noed a few fruit flies (minor population) in back area of premises. Fruit fly trap noted by back door (supplied by Orkin) - effective?

General organization and cleanliness ok. Quats at dispenser and in spray bottles at 200 ppm ok.
