Comments

- General sanitation satisfactory.
- Handwashing stations (front/ customer area) supplied with hot/cold running water, soap, paper towels.
- Two compartment sink available for manual dishwashing. Sanitizer available at 100ppm chlorine bleach concentration. Ensure to follow the proper manual warewashing method and do not mix bleach/detergent
- Surface sanitizer available in designated buckets at 100ppm chlorine bleach concentration at front/back of kitchen.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. Pest control is done through the mall.

Temperature control:
- All coolers (upright, toppings) at < or = 4C. Keep small portions in the top hatch of the prep cooler due to hot weather.
- Upright freezer at -18C
- Rice warmer = 60C
- Hot warming units > 60C
- Thermometers available in all refrigeration units.
