Observation: 1. No sanitizer available for food contact surfaces.
Only sanitizer available is to be used for disinfection purposes on non-food contact surfaces. These bottles were stored at janitor slop sink.

2. 2 comp sink dishwashing being conducted - sanitizer solution is 300-350 ppm QUATS. 2 comp sink dishwashing instructions above dishwashing area states: "200 ppm - solution is OK". "300-400 ppm - solution is too strong". QUATS test strips available.

3. No plugs available for 2 comp dishwashing sink - plastic scooper used as plug
Corrective Action(s): 1. Ensure sanitizer is available for sanitizing food contact surfaces at 200 ppm QUATS and or 100 ppm chlorine in labelled container.
2. Ensure staff follow own manual dishwashing practices: 1. Wash 2. Rinse 3. Sanitize (200ppm QUATS) 4. Air Dry
3. Ensure dishwashing sink has proper plugs designed for that specific sink available. Must have at least 1 plug per compartment (2 minimum).

Observation (CORRECTED DURING INSPECTION): Pesto thawing in zip lock bag on napkin on cart at room temp. Pesto noted at 3 C at time of inspection.
Corrective Action(s): Ensure all frozen foods are thawed in a cooler over night or over cold running water and not at room temperature. Re-located into cooler.

Corrective Action(s): 1.Ensure all equipment onsite are maintained in good working order. Any equipment no longer in us for operating the business should be removed. If this piece of equipment is to be removed it must be approved by Fraser Health. Contact Fraser Health with any updates on this unit and plans for its future.

2. Sani Stuff label noted with QUATS no rinse solution on another bottle with clear solution. 200+ ppm chlorine solution noted. Staff says this solution is used outside unit on public contact surfaces and physical barriers.
Corrective Action(s): Ensure all chemical bottles are properly labelled with its contents including any additional instructions or labelling for particular use. "inside" or "outside" unit use only. "Food contact" or "non-food contact" surfaces only.
