Observation (CORRECTED DURING INSPECTION): Pizza slices in hot hold unit measured at 53C. Operator reports slices are 20 min old and only the bottom stone counter top is heated. All slices sold during the time of inspection.
Corrective Action(s): Ensure the heater for the hot held unit is turned on both the top and bottom of hot hold unit. Hot potentially hazardous food must be maintained 60C or above to prevent the growth of pathogens
