Observation: Two dead rodents were found in the kitchen, One rodent in the dry storage was found to be decomposing.

Comments

-Facility has a main kitchen and three serving kitchens.

Main Kitchen:
-Walk-in cooler was at 3C - temperatures checked daily.
-Walk-in freezer was at -15C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-Quats sanitizer dispenser tested at 200ppm.
-Sink plugs available for 3 compartment sink.
-General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.
-General sanitation satisfactory at the time of inspection. Ensure staff pay more attention to prep table across from dishwasher.
-Deli slicer properly disassembled for cleaning and sanitizing.
-Ice machine clean and sanitary.

Serving Kitchen:
-Refrigeration units were at 4C - temperatures checked daily.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle tested at 200ppm and properly labelled
