Observation (CORRECTED DURING INSPECTION):
There is accumulated grease and food debris which will attract and harbor pests. The following items had grease and food on them:
- interior walls of the dishwasher
- interior and exterior walls of the front self-serve coolers
- exterior surfaces of all food containers and lids
- food inserts storing sauces in the self-serve unit
- each sink basin of the 3-compartment sink unit
Corrective Action(s):
Immediately clean these areas with hot water and soap to remove the food and grease. Sauces SHALL be transferred into a clean food insert at the end of each night, and the dirty one washed. Cleaning SHALL be done every night BEFORE going home. At time of the inspection, staff had cleaned the front self-serve coolers and were working on the other mentioned areas.

Observation:
There is accumulated grease and food debris which will attract and harbor pests. The following areas were found to have grease and food:
- floor mats around the front cook station
- floor around and under equipment and shelves in the front cook station; in the back food preparation area; and in the walk-in-cooler
- walls around the dishwasher and 3-compartment sink
Corrective Action(s):
Scrub and clean all these areas with hot water and dish soap to remove the food and grease. This must be done every night before leaving the store.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Old, worn table cloth is used to cover oil sauces left in the self-serve unit overnight, and the veggie self-serve unit to keep the cold air in. Table cloths are not made to cover foods and pieces of the table cloth could fall into food.
Corrective Action(s):
Immediately throw away the table coth and cover the sauce containers with proper lids or saran wrap. Purchase more lids for food containers or more saran wrap.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4" or colder; freezer -12C or colder; hot holding unit above 60C; and thermometers present.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; stored in groups with raw proteins separate or below RTE foods; and stored 6" off the floor on shelves or racks.
- General sanitation level has decreased from the previous inspection. Cleaning with hot water and soap, ALL surfaces, BEFORE going home MUST be done.
- Exhaust canopy is clean, ensure to call the service company in December 2019 to have it professionally cleaned. Keep cleaning the filters and exterior surfaces of the canopy until the company comes.
- Minor signs of fruit/drain flies seen in the dishwashing areas. Keep this area dry and absent of food.
- FoodSafe certified staff present.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- Follow-up inspection will occur on Oct. 9/19 to ensure all violations have been addressed.
