Observation (CORRECTED DURING INSPECTION): A mixed bleach solution was not available at the start of the inspection. A 100 ppm bleach solution must be available at all times when food prep is taking place and when the restaurant is open.

Observation (CORRECTED DURING INSPECTION): One stock pot of potatoes and a plastic container with green beans were stored directly on the floor. The floor is not clean and contaminants from the floor could be transferred to food contact surfaces or food storage areas when these containers are moved.

Observation: Clean walls in kitchen to remove grease buildup. Implement this in the restaurant's monthly cleaning schedule.

Comments

-Recommend sealed pest proof containers for the rice stored in the back.
-Recommend ice wands for cooling large quantities of food on site.

All coolers were < 4 C.
Hot held foods were > 60 C.
Kitchen hand sinks supplied with hot and cold water, soap and paper towels.
No evidence of pests.
Dishwasher final rinse cycle reached 71 C at the plate level. Check daily.
Fume hood was clean.
