Observation: Accumulation of food debris around the heating tank and dough mixer; on storage shelves which under the prep. tables near the wall; on a wooden divider/pizza table; and in the walk-in cooler (under storage shelve & on shelves);
Black mold on walls in the walk-in cooler;
Corrective Action(s): Please clean with hot water and detergent and sanitize with Bleach at 100 ppm;

Comments

General sanitation is required improvement (please check the violation section).
Kitchen hand washing station stocked with hot/cold running water, soap, and paper towels.
All coolers temperature (display, walk in, prep) - satisfactory ( < or = to 4C.);
Chest freezer - satisfactory;
Three compartment sink available for manual dishwashing (it's set/Bleach 200 ppm).
Dry storage area needs bit to be organized.
No signs of pest activity at the time of the inspection.

Recommendation & friendly reminder:

- Discard the moldy storage cardboard box from the walk-in cooler;
- Remove a flies sticky traps from the kitchen (near the kitchen hand washing sink);
- Domestic small 2 range counter stove has to be used for reheating only/No cooking please;
Note: Observed a poster (a customer area): "New Items, New Menu Starting December 2016" - pasta and fries;
- Ensure that all cold units supplied with thermometers;& temperature log has to be available;
- Make sure FoodSafe Certificates are up to date.

Note: The maintenance/renovation is highly recommended. (Note: bare-wood must be sealed; some shelves badly damaged - cannot be easily cleaned and sanitized; ceiling -poor condition);
