Observation (CORRECTED DURING INSPECTION): Operator used staples to hold the new finish that was placed on the shelves in walk in cooler.
Corrective Action(s): Do not staple this product as the staples may come loose and be found in foods. Ensure all foods remain covered in walk in cooler.

Dishwasher final rinse reached 74 degrees Celsius at the plate surface.
Note: Plumber has plumbed waste hose from dishwasher and drain hose from heating unit to drain so that it does not drain directly into two compartment sink.
Walk in cooler, prep fridges and bar fridges are all maintaining foods at 4 degrees Celsius or colder.
Chest freezers and upright fridge are all -18 degrees Celsius or colder.
Soap and paper towel at handsink.
Area around dishwasher is clean and maintained. Continue to clean and maintain premises.
