302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizing pail contained approximately 0 ppm quaternary ammonium compound (quats). Employee stated that she did not change the sanitizing pail today.
Corrective Action(s): Sanitizing pail was replaced with a freshly dispensed quats solution and measured at 200 ppm at time of inspection. Employee was instructed on how to measure quats, and to replace it every 4 hours or as needed. Adequate sanitizer (200 ppm quats) is required to kill bacteria and viruses that could lead to foodborne illness.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Sole staff member on duty at time of inspection did not have FoodSafe 1 certification. Subway's in-house training program is not a recognized equivalent of FoodSafe 1.
Corrective Action(s): Manager contacted over phone and informed regarding legislative requirement for FoodSafe 1. All subsequent shifts will need to have at least one staff member, in the absence of the FoodSafe 1 trained owner/operator, on-site at all times with FoodSafe 1 certification. Follow-up inspection will be conducted next week to ensure that this is done. Staff member on duty has stated that she will take FoodSafe 1 before Monday, April 23, 2018. Subsequent violations may result in progressive enforcement action, including issuance of correction orders and/or violation tickets.

Routine inspection conducted. The following observations were noted:

- Facility is generally in excellent sanitary condition
- Temperatures: (Max: 4C for coolers, -18C for freezers; 60C for hot-holders)
- Display coolers, 3C, stand-up freezers at -18C, prep-coolers behind counter at 4C, smoothies on customer side stored in ice bath at 4C or less. No hot-holding was occurring at time of inspection. Temperature logs present and up-to-date
- Handwash sink adequately stocked with hot/cold running water, liquid soap, and paper towels
- Employee utilized proper handwashing techniques, including handwashing before and after wearing gloves. Gloves are discarded after each use
- Soda dispensing nozzle in customer area maintained in sanitary condition
- Quaternary ammonium compound dispenser releases quats at 200 ppm
- Mop sink in janitorial closet, chemicals spray bottles (oven cleaner, sanitizer) are suspended on wall
- Utensils, cutting boards, knives, magnetic knife holder in sanitary condition
- All food items are elevated at least 6" off floor - good
- Three compartment sink equipped to wash, rinse, sanitize, and air-dry utensils. Sink plugs present
- Washroom for employees located in Home Depot
- No animals (other than guide animals) observed or noted in premise
