Observation (CORRECTED DURING INSPECTION): 8 bus pans of spinach curry were cooling at room temperature from the previous night (items ranged from 16C to 18C). This is a reoccurring deficiency.
Corrective Action(s): Hot potentially foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Curry was discarded at the time of inspection. Reoccurrence of deficiency will result in the issuance of a violation ticket.

Comments

-Follow-up inspection to March 14, 2018.
-Bleach sanitizer pails were tested at 100ppm at the time of inspection. One container was labelled at the time of inspection. Ensure all containers are properly labelled and relabelled as needed.
-Prep cooler was at 4C.
*Prep cooler closest to handwash station is leaking water.
-Food items were properly stored in food grade containers at the time of inspection.
-Professional pest control operator has been on-site to service facility. Areas affected by rodent droppings has been cleaned and sanitized.
-General cleaning has been carried out in facility. Ensure facility is maintained in a clean and sanitary condition at all times.
-New cutting boards for prep cooler has been ordered.
-Operator is in process of replacing door seals for prep cooler (by office).
-Accurate thermometers present in cold holding units.
-Staff observed wearing clean uniforms. Ensure employees adhere to good hygiene and wear clean clothes when preparing foods.
