Comments

- Discussed proper reheating procedures at time of inspection. Staff confirmed microwave is used to heat soup up to 74C before transferring into a preheated hot holding unit. Staff confirmed that the hot holding unit is not used for reheating the soup.
- No cloth towels were noted on the counter or hanging from cupboards. Staff confirmed that only single use paper towels (available at hand sink) are used to dry hands. Reminded staff to keep all reusable wiping cloths stored in sanitizer solution to prevent microbial growth.
- No perishable foods were stored in the display cooler unit at time of inspection. Sign indicated that single sandwiches/wraps (which will be put out for the lunch rush) are for display purposes only. Sandwiches and wraps are kept in the upright 2 door cooler unit which is at 4C. Staff said that the cooler technician is still waiting on a part to be ordered in order to repair the unit. Continue this practice and do not store any perishable foods in the cooler unit unless it is able to maintain 4C or less --> Another follow up inspection will be conducted to verify that the cooler unit has been fixed.
