General sanitation is good.
Hand sinks have hot/cold running water and are stocked with paper towels and soap.
3 compartment sink available with Quat used for sanitizing step.
Sanitizer buckets readily available with 200 ppm Quat - cloths dispensed inside when not being used, good job!
Cooler temps operating at or below 4 degrees C.
Freezer temps operating at or below -18 degrees C.
Hot holding units operating at or above 60 degrees C.
No signs of pests. Pest management plan in place.
The meat slicers are all free of debris when not being in use.
Dry storage area is a bit cluttered/messy - clean it up and ensure all items are stored on shelves at least 6 inches from the ground.
