Observation: 1. Cans of open sauces in walk in cooler. Open cans of food will rust and contaminate the contents.
2. Equipment in storage is not washed thoroughly enough, small amounts of food debris or pizza dough is observed on mixing machine bowl, meat skewers and lids of food containers. Cleaning and sanitizing of these items again required.
Corrective Action(s): 1. Move all open cans of food into reusable food grade containers with lids, such as a metal food insert. Ensure all foods in storage have proper lids to prevent food contamination. Correction required today.
2. Ensure all equipment and utensils are washing and sanitized thoroughly enough to ensure there is no left over food debris on equipment. Wash and sanitized noted equipment. Correction required today.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Dust and food debris observed in hard to clean areas, such as the walk in cooler fan cover, between the baseboard next to the deep fryer, on the door handle of the walk in cooler and food spills under the shelving next to the grease trap. Cleaning of these areas are required.
Corrective Action(s): Cleaning and sanitizing of these areas are required to prevent attracting pest and food contamination. Correction required in one week.

No signs of pests at the time of inspection.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff washrooms is sanitary with fully stocked hand sink.
Staff demonstrate good hand washing practices and safe food handling.
Food is from an approved source.
Temperature holding is adequate and in use with accurate thermometers and logs.
Take out containers, utensils and pizza boxes are sanitary.
3-compartment sink in use. Chlorine sanitizer at 100 ppm in two sani buckets - good.

Valid Permit posted in kitchen area above the dough cooler.

Holding units:
Front hot holding at 61C (sliced pizza).
Coolers at 4C and below. Freezers at -18C and below.
Note: Front counter cooler temperature fluctuates between 10C and 4C. This unit is used for condiments, ingredients and vegetables.
Ensure this unit can hold all foods at 4C and below, especially on hot summer days.

One pop cooler at 10C. Low risk foods only - pop.

Recommendation:
Some equipment is working but starting to deteriorate. These items may require repair or replacement in the near future:
1. Hand sink hot water handle is loose.
2. Back screen door is held together by tape.
3. 3 compartment sink wall is absorbing moisture and floating. This wall may grow mould over time.
Repair and replacement may be needed soon. Use a durable, nonabsorbent material like FPR.
