Comments

Cool the turkey as quickly as possible and place in the fridge ( 60C- 20C in two hours and to 4C in four hours).
Wipe down the walls and shelves surfaces in the walk-in to remove mold.
Store bottles of medicines and screw driver away from food storage and preparation area.
Ensure wiping clothes used for wiping down the cutting board are stored in a bleach solution (1oz per gallon water) or use a new one every two hours.
