Observation: The dishwasher had 100 ppm chlorine at the final rinse cycle, however, the sanitizer continued to run after the pump stopped and had to be manually turned off. Discussed with the operator, a new sanitizer line is to be installed next week.
Corrective Action(s): Provide confirmation that this has been repaired within one week.

Comments

All coolers were < 4 C.
All freezers were < -18 C.
Hand sinks supplied with hot and cold water, soap and paper towels.
No evidence of pests, traps are in place.
The ice machine was clean.
Sanitizer buckets had 100 ppm chlorine.
Discussed proper cooling for soup broths. The operator fills the sink with ice and water to cool the broth. Recommend purchasing an ice wand to cool the broth quicker.
General sanitation was satisfactory.
