Correction order rescinded - Food safety plan , sanitation plan & floor plan submitted. - As there is no dipper well in the immediate vicinity of the gelato freezer, an interim solution has been agreed upon until a dipper well can be installed in the immediate vicinity of the gelato freezer (this is to be approved by the health officer prior to installation. Submit floor plans with proposed location of dipper well prior to installation for approval from our office) In the interim, the following procedure is to be carried out - There is to be a scoop for each flavor that is clearly labelled - Scoops are to remain in the freezer. Each scoop is to be stored in it's own cup in an empty insert which is in the freezer. - The label must be removed whenever a scoop is to be washed & sanitized. Re-label scoops when they are to be used with the appropriate flavor. - Ensure cups are changed when scoops are changed - Ensure there is no cross contamination between scoops, flavors, and cups. - Recommend washing and sanitizing scoops routinely throughout the day - i.e. every few hours As discussed, this is a temporary measure until the location of a dipper well can be approved and installed. Also, the gelato freezer is to remain indoors as per the updated floor plan - it is not be moved outside.
