Observation (CORRECTED DURING INSPECTION): Food in prep line cooler nearest front entryway was measured at 7 - 9.5 C during inspection. Inspection conducted while restaurant was closed; cooler had not been used/opened for some time.
Corrective Action(s): Food moved to working coolers. Ensure all potentially hazardous food is kept out of this cooler until fixed and reinspected. Call for reinspection once fixed.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer had not been cleaned from previous day's use. Significant amount of meat residue observed on blade and guards.
Corrective Action(s): Ensure slicer (and all other equipment) is cleaned and sanitized after use - do not allow equipment to sit in dirty condition until next day of use.

209 - Food not protected from contamination [s. 12(a)]
Observation: Cured meat strung from shelving units in walk-in cooler was not protected from contamination. Meat was in direct contact with shelving uprights and possibly other food packaging.
Corrective Action(s): Ensure a designated area is set up for this practice (once approved - see violation [212]). Meat must not come into contact with items that have not been cleaned and sanitized for food contact use.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: Operator has started producing cured, dried meats on site. Food safety plan has not been submitted for review regarding use of appropriate nitrate salt strength, and concentrations in final product.
Corrective Action(s): Food safety plan update to be submitted for review by area inspector by Wednesday this week (23rd August 2017). Operator directed during inspection to place the three pieces of cured meat in the walk-in cooler on hold - ensure these are not used until approval has been granted for service.

Observation: Prep line cooler nearest front entrance is not operating at 4 C or colder.
Corrective Action(s): Have unit repaired or replaced by Wednesday this week (23rd August 2017). Note: this cooler has had ongoing temperature issues in the past - if long-term repairs cannot be made, cooler may require replacement.

*Glass washer provided approximately 25ppm iodine sanitizer in final rinse.
*Ice machine in satisfactory clean condition.
*Main dishwasher provided 50-100ppm chlorine sanitizer in final rinse.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Quat sanitizer available at 200ppm.
*Follow-up inspection required. Ensure inspector is contacted once cooler has been repaired/replaced, and that cured meat is not served until food safety plan has been reviewed and approved.
