Observation: a) Replace the broken lid on the chocolate container in the back storage area to prevent contamination.
b) Onions found directly on the floor in the dry storage room. This can attract pests.
Corrective Action(s): a) 1 week.
b) Remove all food that has fallen on the floor today and monitor on a daily basis.

Observation: Repair the broken chest freezer door in the storage room.

Observation: a) Plumbing leak observed underneath the 2-compartment sink when water is run in the left hand compartment.
b) The left hand prep cooler's right hand door is loose and completely detaches when pulled.
Corrective Action(s): a) Fix within 2 weeks.
b) Fix within one month.

Comments

The following items were replaced/ renovated:
-The shed outside was removed.
-The flooring was replaced in the dish pit and in parts of the back storage area.
-The staff washroom door was replaced.
-The area behind the 3-door cooler was properly sealed.
-The wall at the bottom of the staircase was patched.
-The bulkhead above the dishwasher was repaired and is now smooth, impermeable and easy to clean.

The operator plans to cover all exposed soil beside the restaurant with concrete as a preventative pest control measure in the next 2 months.

Inspection:

Pest control is coming on site monthly.
All coolers were < 4 C.
All freezers were < -18 C.
Hot holding was > 60 C.
The dishwasher had 100 ppm chlorine. Monitor daily.
Quats sanitizer was at 200 ppm. Replace the broken spray bottle.
The general sanitation underneath the cook line, in the dish pit and in the refrigerated storage room was satisfactory.

Follow up inspection within 2 weeks.
