Observation (CORRECTED DURING INSPECTION): A) Sandwich display cooler above 4 C. Indicating gauge measuring incorrect temperature (broken).
B) Sandwich prep cooler measuring less than 4 C, but some products in inserts (ham) above 4 C.
Corrective Action(s): A) Replaced thermometer. Turned down temperature on unit. Observed temperatures ok.
B) Keep Lid on sandwich prep cooler table closed when not making products. Keep small amounts of Potentially hazardous foods in the inserts of this unit.

Observation: Food debris and grease build-up noted around the donut station, the donut glazing area, and in the freezer/storage area of premises.
Corrective Action(s): A thorough cleaning of all hard-to-reach areas in back half of kitchen needed. These must include: all areas around and below the donut making station, the glazing table and area, and behind various pieces of equipment including behind the upright freezers.

One of the freezers quite frosted. Recommend defrosting this unit, reviewing the product for freezer burn and discard damaged foods.
Recommend a review of premises sanitation plan and ensure cleaning procedures are clear and detailed enough to facilitate proper cleaning of areas mentioned above.
