Food Safe - reminder to check certificates. These expire after 5 years and need to be renewed before expiry date.
Food Safety Plan - temperature records are being kept. Today, all coolers are at 4 C or colder (small sandwich prep cooler - cheese is <4 C).
Hot holding is all above 60 C - good.
Sanitation plan - Quats solution in triple sink is at 200ppm - good. Wiping cloths are stored in sanitizing solution - 200ppm - good.
Hand washing sinks have liquid soap and paper towels and hot/cold water (staff washroom, back prep hand sink, front cooked area hand sink).
Cleaning - see above.
Freezer - door is difficult to open - repair if needed.
Pest control - no evidence of pests. Dry storage area has been pest-proofed.
