Observation (CORRECTED DURING INSPECTION): Build up of food debris on the industrial can opener and on the potato cutter plate.
Corrective Action(s): Wash and sanitize the items noted above. These items must be sanitized after each use.

Observation (CORRECTED DURING INSPECTION): There was no paper towels and hand soap at the front handwashing station near the display cooler.
Corrective Action(s): Provide liquid hand soap in a soap dispenser and single use paper towels.

Observation: 1) Multiple food items stored uncovered on pastry carts inside the walk in cooler and in the dry storage area.
2) Raw meats (ie fish) stored above ready to eat vegetables on wire racks inside the walk in cooler.
Corrective Action(s): Cover all food items with plastic wraps or proper lids. Store all raw meats on lower shelves below ready to eat vegetables.

Observation (CORRECTED DURING INSPECTION): The back door was kept opened during the time of the inspection.
Corrective Action(s): Keep this door closed at all times to prevent pest entry.

Observation: Build up of dirt, food debris and grease in the following areas:
- underneath the two compartment sink
- around grills
- on floors of the walk in cooler, dry storage area
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule.

Comments

- General sanitation needs improvement, particularly in the dry storage room.
- Handwashing station (in the kitchen) stocked with hot/cold running water, soap, and paper towels.
- All coolers (display, walk in, prep, upright) at < or = to 4C. The display cooler door was kept opened at the time of the inspection. Ensure to keep all cooler doors closed at all times.
- All freezers (chest) at -18C.
- All refrigeration units are equipped with working thermometers.
- Daily temperature logs were not available for review. Begin a daily temperature log to monitor all the cooler and freezer temperatures.
- High temperature dishwasher achieved 72C at the plate's level during the final rinse cycle.
- Surface sanitizer available in white buckets with presoaked wiping cloths at 100 ppm bleach solution. Ensure to provide surface sanitizer at each station (ie serving area, main prep area). Designated bin for dirty wiping cloths and clean ones in the laundry room.
- Dry storage room needs cleaning and better organization. Discard any equipment or other items that are not required to operate the restaurant.
- No signs of pest activity at the time of the inspection.
- Not able to verify FOODSAFE trained staff on duty. Make copies of all FOODSAFE certificate and keep on site for review during the follow up inspection.
- Valid operating permit posted at a conspicuous location.
