Observation (CORRECTED DURING INSPECTION): Rice scoop used for cooked rice were stored in a empty container under room temperature. Cooked rice can stick on to the scoop which allows potential pathogen growth.
Corrective Action(s): Operator stored the rice scoop on ice. Ensure ice bath is kept at 4C or less.

Observation: Accumulation of food debris observed on the floor under the counter top where the hot holding unit was located.
Corrective Action(s): Clean the aforementioned area. Follow your sanitation plan for regular cleaning schedule.

Observation (CORRECTED DURING INSPECTION): Few spray bottles of quats sanitizer were not labelled. Chemical bottles must be labelled to prevent misuse.

Routine inspection:
- Coolers (buffet, walk-in) maintained at 4C or less.
- Two Denby cooler at the front area measured at 9C. No potentially hazardous food stored inside.
- Freezers (stand-up, chest) functional.
- Soup and rice hot held above 60C.
- Hand washing stations provided with hot / cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available in spray bottles and from the dispenser.
- Low temperature dishwasher dispensed 100 ppm chlorine at the plate level.
- Glass washer dispensed 50 ppm chlorine at the plate level.
- Ice machine maintained in sanitary condition.
- Food products stored off the ground.
- Temperature records maintained and available for review.
