Observation: Several corners have mouse droppings, and a dead mouse was found in one steel cat trap. Note that no evidence of food damage or evidence of mice was found on shelves or clean dish storage areas.
Continue trapping and monitoring. More pest proofing required, see #311.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Overall sanitation is pretty good however some hard to reach corners need a good scrubbing.
2) The ice machine interior guard has visible mold. Empty machine, scrub and sanitize, and rinse thoroughly before refilling.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1) Fridge has wood ceiling which has peeling paint. Owner notes that this is planned for replacement with FRP. Also a small section of the tle floor hs been replaced with wood. Replace.
2)small stand up freezer in kitchen has badly broken handle and requires repair or replacement.
3) Some areas of rodent entry require blocking. Noted the dry storage area behind the wine storage area, and a couple of areas in the kitchen. In some areas several layers of old pest proofing is failing. Rip out old pest proofing and re-proof.

Overall sanitation is good.
Hand sinks are stocked and working.
Peroxide spray sanitizer in use.
Fridges are all under 4 Celsius.
Good food handling observed.
Dishwasher and glasswasher both had 50 ppm chlorine final rinse.
Good Covid protocols in place.
