302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Wet wiping cloths noted on the prep table without a sanitizer residue.
2) One of the sanitizer pail was noted at 100 ppm QUATS as per test strip.
3) A staff dried cleaned and sanitized mixing bowl with a wet wiping cloth without a sanitizer residue.
Corrective Action(s): 1) Keep in-use wiping cloths in the sanitizer when not in use to prevent bacterial growth.
2) Refill the sanitizer pail with a fresh sanitizer solution frequently. QUATS concentration must be at 200 ppm or at manufacturer's specification.
3) Clean and sanitize the mixing bowl again. Air dry or dry with clean single use paper towels as discussed.

Observation: A honey plastic bottle that has been cut in half was being reused to collect leftover honey. Bottle was wrapped with a plastic wrap.
Corrective Action(s): Discontinue the use of the bottle noted in the infraction. Provide a food grade container that can be cleaned and sanitized.

304 - Premises not free of pests [s. 26(a)]
Observation: 1) Drain flies noted in the following locations:
-Large number in the dishwashing area. Many flies noted on the food contact surfaces such as utensils and cutting boards on the drying racks.
-Small number in the staff washroom
- 4 - 5 flies on the kitchen wall
2) Rodent droppings noted in the following locations:
-a corner next to the honey madeleines area
-under the shelf in the dishwashing area
Corrective Action(s): 1) Clean and sanitize all the food contact surfaces that have been affected by pest activity. Store clean utensils and equipment elsewhere until the pest issue in the dishwashing area is resolved.
2) Remove droppings noted in the infraction. Clean and sanitize the area affected by the rodent activity to get rid of bacteria, viruses and pheromones which may attract more rodents.
3) Contact the pest control company right away and get rodents and flies problems serviced.

Observation: 1) Soiled wiping cloths were stored in a container with many pest entry points. Operator reported that wiping cloths are picked up by the laundry company every Wednesday. Large number of flies noted in the container. The container is located in the dishwashing area.
2) A small hole noted in a corner next to the honey madeleines oven. Rodent droppings noted in front of the hole.
Corrective Action(s): 1) Provide a container with tight fitting lid for soiled wiping cloths.

2) Block the hole with a material that cannot be chewed through by rodents (eg, metal mesh).

Observation: a handsink in the dishwashing area fell off from the wall. Operator reported that a heavy object fell on to the handsink. Adequate handwashing practice noted from the staffs in the food handling area. Foods are not handled in the dishwashing area at all.
Corrective Action(s): Operator reported that he will apply caulk himself today.

Comments:
-Handwashing stations equipped with hot/cold running water, liquid soap and paper towel
-General sanitation is adequate
-QUATS sanitizer from the dispenser noted at 200 ppm as per test strip
-Manual dishwashing procedure reviewed with operator
-Adequate handwashing noted
-3 undercounter coolers and wall-in cooler noted at 4 deg. C or below.
-Temperature records available but not up-to-date. Please monitor the temperature of the coolers daily.
-Thermometers available
-All goods >15 cm off the floor
-Health permit posted
-Operator has food handler certification from Ontario

Note:
Operator wishes to store organic waste bin in the walk-in cooler to slow down the organic matter decomposition. The request is granted with the following conditions:
1) Organic waste bin is located far away from the food items to avoid contamination
2) Organic waste bin is closed at all time
3) Organic waste bin is emptied out every day
