Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temp dishwasher measured during two cycles and only reached 69C and 67.4C final rinse temperature at the plate. Hot water tank water temperature was measured at 42.5 Celsius.
Correction: Dishwashing was ceased and hot water tank setting increased. Hot water measured 44C and final rinse of dishwasher measured at 76C at plate. Ensure that dishwasher temperatures at manifold are accurate, if not, repair.

Note: for dishwasher, source water proof thermometer to verify final rinse temp at place to ensure 71C min temp - Date to be corrected by: Immediately*.
Comments

- Dishwasher was serviced during inspection. Note: spray nozzle had a calcium build up therefore rinse water was not reaching plate surface. final rinse at plate surface currently 78.8C

- Operator had turned up hot water tank and has since reduced temperature. Ensure that it does not impact wash and rinse water temperature.

- Continue to address issues as per routine inspection.
