Observation (CORRECTED DURING INSPECTION): -Large pot with a dark sauce on dry storage shelf.
-Operator said sauce was left in pot to cool from last night.
-On probing, contents were 26.1°C.
Corrective Action(s): -Pot contents were dicarded.

2. From 20°C to 4°C in 4 hrs or less.
NOTE: To aid cooling transfer food/sauce to smaller containers.

-Hand-washing sinks have hot water, liquid soap and paper towel
-Coolers are <4°C and have thermometers
-Freezers are <-18°C
-Rice holders (x2) are at 63.4 and 63.7°C
-Dishwasher dispensing Bleach at 50ppm.
NOTE: Took ~ 4 cycles for dishwasher to start dispensing bleach at this concentration.
-Spray bottles of bleach @ 200ppm
-Dry storage foods on shelving and protected from contamination
-Raw meats stored below ready-to-eat food in coolers
-Premises appears clean and regular cleaning is evident.
