Observation (CORRECTED DURING INSPECTION): 1. Observed a new carrot peeler - discussed washing & sanitizing procedure - determing that current procedure is not adequate
2. Ice cream scoop left in container of water after use

2. Ice cream scoop must either be stored in a dipper well or washed and sanitized after each use - ice cream scoops placed in dishwasher at time of inspection

Dishwashing area requires cleaning in between wall & "dirty" side of dishwashing line
Observed spray bottles of sanitizer, however ensure every work station is equipped with sanitizer spray bottles - i.e. in kitchen, salad prep, bar, cook line, etc.

All other coolers are maintaining foods at 4C or below
hot holding is >60C - discussed reheating process
Hand washing sinks are properly equipped
Sanitizer dispenser at 200ppm Quats

Dishwasher tested at 74C at plate surface during rinse cycle
