Observation: Floor in hard to reach areas under equipment and around legs of shelves observed with minor accumulations of food, dust and debris. Hard to see without a flashlight as these areas tend to be dark. Sticking to a schedule for moving equipment and shelves will allow proper cleaning to take place without having to shine a flashlight in these areas to see.
Corrective Action(s): Make sure staff, cleaning staff, know to move things on set schedule to properly clean below, behind and around noted areas.

**Make sure standard protocol are followed with sani-bucket switch over. Measured both buckets just prior to changeover and measured less than 150 ppm. Objective start range should be between 200 and 400 ppm (Quats). New buckets filled from source at proper range.

Dishwasher at 77.6 C at plate.
Cooling units less than 4 C.
Freezers at -16 to -18 C.
Handwash stations OK.
Washrooms ok.
