Observation (CORRECTED DURING INSPECTION): Internal temperature of potentially hazardous foods (PHFs) in the walk in cooler and right side of pizza assembly cooler was measured at ~6C. All PHFs were relocated to working coolers.

Observation (CORRECTED DURING INSPECTION): Paper towels were not available at the back hand washing station. Paper towels replenished at this time.

Observation: Observed use of sinlge use containers without a handle for dispensing dry and wet ingridients.
Corrective Action(s): Do not use single use containers for dispensing foods. These containers are not meant to be reused (cannot be washed and sanitized). Remove all single use containers from food storage. Correct this by: today.

Observation: Large amount of fruit fly activity was noted in the dishwashing area. Pest activity is localized to three compartment sinks area only at this time.
Corrective Action(s): Improve sanitation and install fly traps to discourage pest activity.

Observation: Observed organic matters under the three compartment sink.

Observation: Walk in cooler and right side pizza assembly cooler's ambient air temperature was measured at 6.5-7C. Walk in cooler's temperature was adjusted at this time and reached 4C during the inspection. A technician was contacted at this time to service the right side pizza assembly cooler at this time.
Corrective Action(s): Service the pizza assembly cooler. It must maintain foods at or below 4C at all time. Correct this by: 1 week.

Routine inspection conducted:
Hand washing stations were fully equipped with hot and cold running water, liquid soap and paper towels (refer to violation code 401 for additional details).
All coolers measured at 4C or less (refer to violation code 308 for exceptions).
All freezers measured at adequate temperature.
Food contact surface sanitizer was measured at 200 ppm chlorine as per test strips.
Hot holding units' ambient air temperature measured >60C.

Unannounced follow up inspection to be conducted in 2-3 weeks.
