Food not cooled in an acceptable manner [s. 12(a)] (Hot gravies were being cooled in covered plastic buckets inside walk in cooler. Internal temp. of gravies at 80°C. Gravies must be cooled either in an ice-bath or in shallow metallic pans 2"-3" deep. You must cool any hot food from 60°C-21°C within 2 hours prior refrigerating.)

Salad cooler has now been repaired. Registered 1.6 degrees C at the time of inspection.
Bar washer iodine tested 25 ppm. Good.
Please continue to test the bar washer iodine and dishwasher chlorine at least once a day.
