*Discussed warewashing procedures during inspection; full 3-compartment warewashing methods are in use.
*Tools and utensils maintained and stored in clean condition.
*Walk-in, prep line and front display cooler temperatures satisfactory. Thermometers available in each unit.
*Temperature records kept.
*Quat sanitizer available at 200ppm in cloth bucket.
*Mixer, whip and grating attachments stored in clean condition.
*All food stored off the floor and protected from contamination.
*Date labels applied to majority of perishable items in coolers.
*Hand sinks at front, in washroom and in kitchen supplied with warm water, liquid soap and paper towels.
