Comments

-Ensure that the month and year is recorded on the temperature records posted next to the walk-in cooler.
-Ensure that chlorine test strips are available for checking the dishwasher and glasswasher.
All coolers were < 4 C.
All freezers were < -18 C.
Dishwasher final sanitizing rinse cycle had 50 ppm chlorine.
No evidence of pests.
Glasswasher final rinse cycle had 100 ppm chlorine.
Ice machine was clean.
Cooling procedures discussed.
Overall sanitation was satisfactory.
