Observation:
Observed food stains on walls and the outer surfaces of equipment in the back food preparation area. This will attract and harbor pests (flies, cockroackes, rodents, etc.).Detailed cleaning of walls, and the outer surfaces of equipment is needed.
Corrective Action(s):
Detailed cleaning of walls and the outer surfaces of equipment requires to be done daily to remove the food debris. Ensure staff are using a degreaser/soap to remove the food debris, and then sanitize with the Quats ammonia chemical to kill the exposed germs.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Found a piece of carpet on the floor in the front food service area. Carpet is not cleanable on a daily basis as it can't be exposed to water and soap, nor is it durable.
Corrective Action(s):
Immediately remove the carpet from the premises and discontinue using it in food service, storage and/or preparation areas.

Observation:
Found plastic food containers and lids to be cracked, chipped and broken. These damaged containers and lids harbor germs in the cracks and may allow pieces of plastic to fall into food.
Corrective Action(s):
Discard all damaged containers, lids and utensils. Purchase new items to replaced the damaged ones. Inspect all food containers, lids, and utensils on a daily basis, and discard any damaged items.

Observation:
There are a large number of empty drink bottles and cans in crates, being stored on the premises. The crates are stacked in walkways in the back food preparation area. This makes it difficult to clean the floors and it creates an unsafe work area for staff, as it is a cluttered work space.
Corrective Action(s):
Recycle the empty drink bottles and cans more frequently to prevent creating a cluttered area, and to allow/encourage cleaning of the premises.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezers were -20C; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle was 79.4C at the plate's surface, as per max/min thermometer.
- Quats sanitizer was 200ppm in spray bottles and in cloth buckets.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Staff properly use disposable gloves. Gloves are removed and discarded when handling cash. Staff put on a pair of new gloves when handling food. Ensure staff are washing their hand with soap and water BEFORE they put on a new pair of gloves.
- Food stored in food grade containers; covered; labeled; date coded; stored in groups; and stored 6" off the floor on shelves or racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.
- Valid health permit decal, and permit posted in a visible area.
