Observation: (REPEATED VIOLATION) 1. Raw meat was stored above cut vegetables on the shelves located in walk-in cooler.
2. Storage containers in dry storage area were either left open or partially covered.
Corrective Action(s): 1. Ensure that raw meat is always stored at bottom shelves and cut vegetables/ready to eat food on top shelves to prevent cross-contamination from meat juices.
2. Ensure that dry food is stored in pest proof containers and kept covered at all times to prevent pest entry and risk of food contamination.

Observation: (REPEATED VIOLATION) Low temp mechanical dishwasher was unable to dispense chlorine residual at 50ppm even after multiple runs. However, no dine-in services are offered due to COVID-19 pandemic and facility is using 3 compartment sink for dishwashing.
Corrective Action(s): Repair the dishwasher prior to starting dine-in services. Please NOTIFY the district EHO when the dishwasher is repaired.
Use 3-compartment dishwashing sink to adequately wash and sanitize the food contact surfaces until the dishwasher is repaired.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Coolers were measured at 4C or less.
- Freezers at -18C or less.
- No hot holding was conducted at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- Meat slicer was maintained in sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

NOTE - Facility has changed name on the front signage. Please submit a request for facility name change to Fraser Health as soon as possible. A copy of "Application for Health Approval" was provided during inspection.
