302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): - Dishwasher not turned on/not in use at the time of the inspection. Detergent container connected to dishwasher was empty. Two blender pitchers present. Staff were noted spraying out pitchers with water at the time of the inspection. Manager reported the pitchers are soaked in bleach and soap solution in the mornings. This is not proper manual warewashing procedures. Additionally, facilities present are not adequate for manual warewashing. This is a repeat issue from previous routine inspection.
Corrective Action(s): - Equipment must be washed, rinsed and sanitized. Equipment/utensil (ie. blender pitchers) in continuous use must be washed and sanitized at least once every 4 hours. Review this with all food premises staff.
- Manager was able to turn on dishwasher and get it running at the time of the inspection.
- Obtain detergent for dishwasher. In the interim, manually wash pitchers and sanitize in the dishwasher.

Comments

- Premises is only preparing and serving protein shakes made with flavour concentrate and protein mix. Food is no longer being served.
- Food premises maintained in a sanitary condition.
- Handsink supplied with hot and cold running, water, liquid soap and paper towel.
- Sliding door cooler was at 4C
- Back counter cooler at 1C (where flavour concentrate stored)
- Other coolers no longer in use.
- Bleach sanitizer solution present in spray bottle. 200ppm chlorine detected.
- No signs of pest activity noted at the time of the inspection.
- Once dishwasher was turned on and heated up, final rinse was measured at 75C. Ensure dishwasher is turned on and meeting required wash and rinse temperatures while food premises is in operation.
* Manager's foodsafe level 1 certificate is no longer valid. Grace period for recertification was extended until 31-Aug-2018. See foodsafe.ca for information regarding recertification. Operator must hold a valid Foodsafe level 1 certificate and in the Operator's absence, at least 1 staff member must be present with Foodsafe level 1.
