Corrective Action(s): Continue to have pest control service. Ensure all of the above areas are treated. Did not see traps in some of these areas.

Observation: Storage is cluttered.
Corrective Action(s): Remove clutter as discussed. Pails should be stored off the floor on shelves to reduce hidding places for mice. Remove unused equipment from the storage spaces.

Observation: Mice dropping noted. Floor under the pop dispenser, under the stove, around the pails stored on the floor.
Corrective Action(s): Remove droppings. Clean all hard to reach areas each night to remove food source for mice.

Comments

Dishwasher, refrigeration and hot holding temperatures are satisfactory.
Mice control is a problem.
Reorganize storage to reduce clutter.
Continue to wipe down all counters and surfaces with bleach solution at night and in the morning after opening. Continue to store ingredients in hard containers with lids.
Store trays of sweets in the kitchen in the walk-in at night.
