Corrective Action(s): Eggs can contain salmonella and must be kept refrigerated at all times - make sure that only small quantities of eggs are taken out at a time and all eggs above 4C for greater than two hours to be discarded.

Corrective Action(s): All foods, whether in the cooling process or not must be covered to prevent both physical and microbial contamination of food.
NOTE: If actively cooling food a corner of the cover may be turned up to allow heat to escape and facilitate cooling.

Observation: Mould in both the ice machine in the kitchen and the walk-in cooler.
Grease accumulations on the top of the deep fryers
Grease and food debris in both microwave ovens
Grease and dirt on underside of shelf for dish racks as well as in the canopy over the dishwasher.
Corrective Action(s): Premises needs a thorough cleaning where food debris, grease, and mould accumulations.

Comments

All refrigerators and freezers meet temperature requirements, dishwasher sanitizing at 76C at the plate surface, sanitizer buckets and spray bottles all have bleach at 100 ppm, food handling satisfactory, no indications of insect or rodent infestation.
