Observation: Rice paddles being stored in room temperature water container and then not being time tracked for cleaning frequency (every 2 hours)
Correction: Wash and sanitize rice paddles every 2 hours ensuring to time track between washings. When washing follow posted 3 compartment sink "wash, rinse, sanitize" method.

- Bagged rice is stored off the floor
- Floor under grill is cleaner, ensure to maintain cleanliness in this area
- Operator has instructed staff to aquire Foodsafe or equivalent training

- Prepped sushi is now being stored in undercounter cooler. A sign displaying sushi is being used rather than keeping sushi out

- Rice paddle storage water being changed every 2 hours after "wash, rinse, sanitize".
