Follow up inspection to report DSOG-AQGTYJ
- Line prep cooler measured at ambient temperature 4C at the time of the inspection. The top drawer is measured at 8C. Only vegetables and picked food items are stored on the top drawer. Store small portions at a time to prevent temperature abuse of cold food items. Invoice of the cooler servicing was reviewed. Condenser was cleaned and coolant added. Continue with the temperature log and keep up to date.
- Proper food storage inside the walk in cooler. All meats stored on bottom shelves of wire racks and vegetables on top shelves.
- Dirty cloth were stored outside.
- Surface sanitizer available at 100 ppm chlorine solution.
- Cardboard was not being used as liners on wire racks or counter.
- Accurate thermometer available inside line prep cooler.
