Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Observed food debris in the sanitizing sink where clean dishware and utensils are soaked. The sanitizing solution is only filled less than half way up the sink. Onsite staff mentioned issues with drain plug, causing sanitizer to drain and they can never fill entirely.
Correction: Rewash all items in the sanitizing sink. Ensure that all food debris are rinsed off in the middle sink before submerging in the sanitizing sink. Replace with a working drain plug so the sanitizer can be filled and all dishware properly soaked. There is also no drain plug for the middle (rinsing) sink. Complete this asap.

New drain plug obtained and sanitizer is able to be filled without leaking. 200ppm Quats was filled more than half way to allow utensils to properly soak.
Three drain plugs are onsite.
Droppings behind ice cream machine has been removed.
Chili was hot held at 63.2C
Staff onsite is Foodsafe certified.
No further concerns.
