Observation: Large round tofu trays soaking in caustic soda, detergent and bleach.
Corrective Action(s): Ensure all cleaning and sanitizing are done separately. The bleach and detergent will break each other down and not be as effective at cleaning and sanitizing the dishware.
Follow manual dishwashing method:
1.Wash (Caustic soda & detergent)
2.Rinse (fresh water)
3.Sanitize (Bleach: at least 50 ppm chlorine)
4. Air Dry

Observation: 1. Some black flies noted by tofu press unit.
2. Some mouse droppings noted by front hallway before processing room.
Corrective Action(s): Ensure all pest activity is controlled, pest control is informed, and all recommendations by pest technicians are followed. Clean up all mouse droppings and monitor activity.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Required cleaning:
1. Walk in cooler door and handles are covered in dried food debris
2. Rollers in tofu squeeze unit appear black on the edges and white on the center of the roller
3. Tofu drying fans covered in dust and food debris
Corrective Action(s): Ensure all equipment and surfaces are maintained in sanitary condition.
1. Clean the cooler doors, handles and walls to prevent food accumulation.
2. Clean tofu squeeze unit rollers completely - do not leave unclean surfaces or then can be transferred to food contact surfaces or food directly
3. Ensure all fans are properly cleaned and do not blow dust and debris on drying food.

Observation: 1.Insulation around PVC pipes over hot pipes next to tofu skin right unit is falling apart
2. Wooden press tray - raw wood splitting and rusted metal brackets
3. Food contact of black waste pipe used as funnel for bottom of soybean machine moving soybeans into a collection container under machine
4. White cloth used to hold metal trying rack above tofu skin machine.
Corrective Action(s): Ensure all food contact surfaces and equipment are smooth, durable and easy to clean.
1. Repair/replace insulation material around PVC pipe. Insulation could end up falling into the food. Repair/replace.
Correction date: 1 week
2. Raw wood can not be cleaned and sanitized as it is a porous material. Replace equipment. (REMOVED DURING INSPECTION)
3. All equipment and materials in contact with food must be food grade. Black waste pipe is not food grade and must be replaced.
Correction date: 1 weeks
4. Avoid using cloths as repair materials as they absorb moisture and are difficult to clean in place. All repairs must be done with appropriate material that meet the above requirements. (REPAIRED DURING INSPECTION)

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1.6 inch hole in back side of building near waste collection shelter. Hole goes to the centre of dry storage room.
2. Gaps around back loading bay door at the bottom and the sides - rollers seem to have fallen off lower tracks.
Corrective Action(s): 1.Ensure hole is completely sealed to prevent possible pest entry into building. Owner says the grate on the inside has already been sealed with concrete. He will also seal the outside entry point as well.
Correction date: 1 month
2. Loading bay door needs to put back into tracks and gaps around door sealed to prevent pest entry.

Comments

-Hand wash station fully supplied liquid soap, hot & cold water and paper towel. Fully accessible at entrance to processing area and washrooms.
- Staff wear aprons, hair nets, boots and gloves in processing area
- Reviewed cleaning and sanitizing procedures of processing machines: Caustic water run through machines to break up tofu proteins and then hot water is pumped through machine after. All other equipment are scrubbed with wire brushes, rinsed with caustic soda water then regular water and at the end of day sanitized with Quats from Ecolab.
-Walk in cooler noted 3 C. Appears to maintained in sanitary condition. All food is covered, organized and stored at least 6 inches off the ground.
-Cooling practices for Soy products - satisfactory
-Storage practices for dry foods ( soy bean bags, spices, additives) are on pallets or at least 6 inch off the ground. Container storage units appear organized with satisfactory ventilation.
-Deep fryer oil maintained and discarded in sanitary manner.
-During cleaning and cooling large amounts of water is pooled on the ground and then directed to large floor drains.
-Some pest activity noted - pest control reports reviewed for Nov2017,Dec2017,Jan2018- no major concerns noted. Recommendation on all 3 reports is to keep all back doors tightly closed (violation noted above)
-Discussion about pest entry through waste chute in back side wall. End of operation the chute is pulled inside and hole is sealed by lid and held in place by chute - satisfactory at this time
