Observation (CORRECTED DURING INSPECTION): Stuffing stored in the oven was measured at 52C since noon. Repeat.
Corrective Action(s): Explained to owner again that hot potentially hazardous food must be kept over 60C. Directed owner to cool food down properly and keep cooked and cooled down food in fridge, then retrieve to reheat by order. Demonstrated how to determine food temperature (to keep hot and to cool down) using thermometer onsite. This is a temporary measure as owner informed that he would like to obtain a small hot holding unit for the stuffing. Current hot holding unit has reached capacity.

Observation (CORRECTED DURING INSPECTION): Small amount of meat debris noted in the guard of meat slicer. Directed owner to clean and sanitize again at time of inspection.
Corrective Action(s): Ensure all parts of the meat slicer is properly cleaned after use each week.
