Observation: All three bleach sanitizer bottles tested were too strong (> 200 ppm) and bleached out the test strip. This poses a chemical contamination hazard when used on food contact surfaces. Photos taken.
Corrective Action(s): Refill all three bleach bottles by tomorrow. One teaspoon of bleach per Liter is the amount required to obtain 100 ppm chlorine.

209 - Food not protected from contamination [s. 12(a)]
Observation: A bag of brown sugar in the unused walk in cooler had split in the middle and spilt onto the floor. This poses a risk of contamination by chemicals and pests.
Corrective Action(s): Place the brown sugar in a pest proof container by tomorrow.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: a) Cleaning needed on the floor in the dry storage area in the front at kitchen 5c.
b) Walk-in freezer has a large buildup of ice on the floor and on boxes of food. A fan had also fallen from the ceiling and is frozen to the top of one of the boxes. Photos taken.
Corrective Action(s): a) Cleaned during inspection.
b) Clean by Friday.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Paper towel dispenser was empty in kitchen 5b (not in use during the inspection).
Corrective Action(s): Ensure that paper towels are available at the sinks at all times.

Comments

All coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests. Traps in place.
All hand sinks, with the exception of the one noted in violation code 308, had hot and cold water, soap and paper towels.
The exposed wood behind the 3-compartment sink in kitchen 5b has been painted.

Follow up inspection required to address the violations noted.
